Breaded Pork Chops

My family of 5 got 5 hens in the spring for a new project.  Our hens recently started laying eggs and now we are getting about 5 eggs a day.  I was looking forward to the day when they would start laying eggs, but now that they do, it can be a little overwhelming to use them all, so I am currently searching for egg recipes and will share what I find on this blog for others who may be experiencing the same dilemma. 

Breaded Pork Chops

Since I am lazy when it comes to cooking, I look for things that will be easy and use up eggs and I came across breaded  pork chops.  We had some pork chops in our freezer, of course we have eggs and we also have crackers.  That's all you need for this quick and easy dinner item.

Ingredients:

A few Pork Chops
3 or 4 eggs
a couple handfuls of crackers (we used multigrain club crackers, but Saltine crackers may work better if you have them laying around )
Salt for taste
Pepper for taste

Directions:

Take a plastic bag and put the crackers in it, I used a bread bag. Smash the crackers until they are crumbs.  This was the fun part.  A good way to get out frustrations of the day.  Ha!  After the crackers are all smashed up, put them in a bowl.  In a separate bowl or skillet, put a few eggs and beat them with a whisk and sprinkle them with salt and pepper for taste.  Then take the pork chops and individually soak them in the eggs one side and then flip them over and soak the other side and then do the same thing with the cracker crumbs until the pork chop is completely covered with crumbs.  Place the pork chops in a baking dish and bake at 400 degrees for 30-40 minutes.  I dumped the extra crumbs on the pork chops and dispersed them evenly.  I scrambled the leftover eggs and gave them to my two year old.
